Chef
Michel Saragueta, your host, was born in Biarritz,
France. His passion for cooking began at the age
of thirteen while at his mother's side.
Michel
concentrates on producing some of the finest classical
French fare found in Chicago's western suburbs.
A French Basque, Chef Michel started his culinary
journey in the French manner at the Grand
Hotel Bayonne in the Basque region of France.
Michel then moved on as Chef Poisonnier at The
Savoy in London, Chef de Saucier at the Hotel
Plaza Athenee in Paris, Sous-Chef at Hotel Okura
in Amsterdam, Chef de Cuisine at the Hotel
Okura in Japan and finally Executive Chef in Paris
at the Hotel Lancaster.
With
his credentials under his toque he hit the shores
of America opening Ciel Blu at the Mayfair Regent
Hotel in Chicago.
His
extensive career has found him at The "21"
Club in New York, Le Mondrian Hotel in Los Angeles
and as chef to the stars at The Beverly Hills
Hotel. During his tenure at the Beverly
Hills Hotel, Michel appeared in the "Lifestyles
of the Rich and Famous Cookbook" which included
favorite recipes of some of Hollywood’s famous
legends such as Elizabeth Taylor, Jimmy Stewart,
Sophia Loren, Johnny Carson and many more.
Why
would such an accomplished chef with amazing credentials
come to a small bistro in the western suburbs
of Chicago? Having been many places and seen many
things, this veteran chef knows the value of
creating outstanding cuisine from the finest ingredients.
